I do it that way EVERY time I change tires.  I pull the rear wheel first, then I use my 2.5 ton auto jack and lift the front of the bike.  Pull the front wheel.  Then PRESTO!!  Both wheels are off...

Not so hard!

I just use a floor jack under the header.  Did it tonight in fact.  Had to change the front rubber out and used Fred's videos to walk me through it.  The videos are worth their weight in gold and they have already saved me the purchase cost a couple of times over.  I just wish he didn't keep telling us to reference the manual because that is about as well designed and easy to use as a screen door on a submarine :o

can you have both the back and front wheel off with just the center stand down??? Would I have to worry about it tipping over?
Sure Can!

I put new tires on recently and yes you absolutely can have both wheels off at the same time....take a look

This is actually pretty easy to do, don't over think it.
