Her hair doesn't seem to be blowing around much. Not for the perceived speed anyway.
At the end, when she waves adios, her hand isn't on the throttle.

She obviously has a throttle lock.  She input some throttle before waving and the camera guy slowed down.  Hopefully she practiced the skills while geared and then pulled off the stunt.
