Like gP said, it doesn't void your warranty. It doesn't have to be done by a dealer either, although it is preferred. Generally, Kawasaki would have to prove that your missing a scheduled maintenance interval is the cause of whatever future damage that might occur.... and that isn't easy for them to do. Some dealers might harass you, though.
That said, it is prudent to get the first service done close to the time recommended; I believe it is probably one of the most important services to protect the engine and also to make sure the bike is safe (this is the best time to find things that worked loose or didn't quite get assembled tightly).
And on that topic, it is a good time to spend a relatively small amount of money and extend that incredible 3 year warranty to 6 with the factory extended warranty:
