I was just wondering if anybody else had built one of these? I am building one myself right now. I have the drum and have already drilled four holes at the bottom for air intakes. Two will have caps for them, the other two will have ball valves on them for controlling the heat. I have four in the advent that I want to  get it hotter like for chicken. I will be putting six exhausts in the lid. I am also going to put in and adjustable shelving system. This pic isn't mine but it is generally the way I am building mine. The guy that did this one also has a nice video on building one.

I finally finished mine and I have a few pics. This first one is the finished product, although I do want to add a few items. I made mine a theme version and mine is the San Antonio Spurs. The last thing to get is my Spurs License to complete the theme.



It is hard to tell here but my basket is about half full of briquets. I added some hickory chunks in there too.



I lit off about 16 charcoal briquets in my chimney starter and threw them in here.



This is my brisket. It was only about 10.5 pounds, and that was before I removed the fat.



This is the brisket after about 12 hours at around 255.



This is the charcoal basket with the leftover charcoal and some hickory chunks. The second screw at the top is actually only half way. There is another one on top. That second screw was where I had the charcoal loaded to. At most it only used about 2/3rds of the charcoal that was in there.



I should also add that it was probably the best brisket I have ever had. There is a guy at work who talks himself and his brother as serious BBQ'ers but I have had there stuff and I honestly have to say that I wasn't all that impressed. Mine however I am extremely impressed with. It was super tender even after being in the fridge. My son who is special needs and is very picky about what he eats even asks for more. Another guy at work had a piece I gave him and he said that it was simply outstanding. Now I gotta get ready to do more.

I don't know- maybe it is good, maybe not. We're going to need your address and you better make some more and we'll find out how it is.....  :D

But really, you are killing me here. I have been looking at meat smokers for years and have not found anything that is reasonable in price and even looks like it might work well. Excellent job on that smoker! And the brisket looks outstanding.

What is the rub mix you have on it?   

That looks great.  Have you tried smoking whole turkey breasts?

I'll work on more pics of the inside this weekend. This the first thing I have cooked. I want to work my way thru a bunch of stuff including a whole turkey.

I ended up using two different rubs. I bought one from Academy as I didn't know what HEB had and I didn't want to miss out. This is the one I think:



I also found some from HEB that was mainly salt and pepper. I used that one first and then went over it with the above rub.

I'd be happy to have some folks over, but I would have to get the house and yard cleaned up first. She would have a s--t fit if a bunch of folks showed up before that was done.  :rotflmao:

I recently did some pulled pork. That lasted for a couple of weeks of sandwiches. They way I know how good the meat is is whether my son will eat it. He can be a persnickity. On both the brisket and pulled pork he was always going back for more. I have updated my smoke and I will explain later why.
