How difficult of a task is it to replace the clutch and brake lines? I may be adding Phil's risers, and would like to avoid having to have a shop do this.

You shouldn't need to replace the lines if that's all you are doing. Do you have risers as well? I have the Heli 1 3/4 risers with Phil's wedges and still have the original lines. I did have to slightly reposition the brake line where it attaches to the master cylinder, though.
Assuming that your setup requires new lines then getting the new brake and clutch lines bled can be difficult to damnably difficult, respectively.

I have an '08 NON-ABS, the clutch was the hardest, required removal of the L. side plastic and the stock line is pretty convoluted with lots of bends and several attaching points. The brake was pretty easy, one line from master cyl. to R. front caliper and then the line from R. to L. caliper. The latter wasn't really necessary. I've done two non-ABS bikes.
On the ABS models there is a line from master cyl. to two junction blocks on the steering head, one for the brake & one for the clutch.
