OK, that warning aside, I do wonder how much a big deal it is...

Depends on what foam you cut. It you just cut the soft foam, it's no big deal, as that's only there for comfort anyway. It's the real hard foam that saves your braincase.

I use these.  They have several different cones that come with the ear buds.  so at least one should fit.  Music is nice and loud and almost no ambient noise!!!

Haven't had a chance to ride with them yet, but did try them under my helmet and they stay in place pretty well. Took them on a airline flight this week and they do a reasonable job of blocking out the noise. I figured at $33 for 2 pair, it was worth a try.

True that!  For some reason I assumed he was cutting the styrofoam (hard foam).
